This is a position from a DGS game I finished not to long ago. Does black need to spend a move connecting the center stones, or can black play elsewhere? Looked at another way, can white cut off the marked stones?

Online playing schedule: Every tenth February 29th from 20:00-20:01 (if time permits)
The only possible move to disconnect would be M7 but black can answer with K6 and all is safe. Black needs to watch out as the position changes.

An interesting move in this position is S7. How should white respond to that?

Your move 2 would be very bad as it doesn't really protect anything. You have to be more indirect as I showed in my earlier post.
