You don't have direct access to the filesystem on an iOS device. Each app mediates access to its own sandbox; some of them support File Sharing, which lets you move files to and from it in iTunes. Others do their file management in-app: they may allow you to attach their documents to emails, or receive documents in attachments in URLs.
