I always record my games at tourneys, and it doesn't stress me out at all. I used to use a palmpilot, now I use an archos 43, which is like an ipod touch for android. Here are two tips to avoid getting stressed:
1) Record your moves, and your opponents, on their turn. That way you aren't using your clock to record.
2) When you get into endgame, or if you are having time trouble, just stop recording and focus on the game.
The first 100 moves are enough for a good game review, and few pros will go beyond that anyway.
