I'm essentially looking for a book like Brilliant Endgame Plays, but perhaps on an easier level. Does anyone know of any other books that have this specific kind of endgame problem?

I recommend Get Strong at the Endgame, which includes both endgame tesuji problems and 13x13 problems in the style you are seeking.
